Homemade lemon poppy seed cake: moist, nutty, bursting with fresh lemon flavor.
Ingredients:
  • 2.25 cups white sugar
  • 1 cup unsalted butter, softened
  • 0.5 cup poppy seeds
  • 0.25 cup finely grated lemon zest
  • 1 teaspoon vanilla extract
  • 2.75 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 1 cup buttermilk
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C, then generously grease a fluted tube pan (such as a Bundt pan) on the bottom and sides.
  • Cream together sugar and butter in a bowl using an electric mixer until light and fluffy. Mix in eggs one at a time, ensuring each one is fully incorporated. Then, decrease speed of mixer and blend in poppy seeds, lemon zest, and vanilla extract.
  • In a separate bowl, mix together the flour, salt, baking soda, and baking powder. Gradually add the flour mixture to the buttermilk, alternating between the two.
  • Scoop batter into the pan that you have prepared.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 65 to 75 minutes.
