Little lemon & poppy seed cakes

Delicious and budget-friendly lemon-poppy seed cakes, great for any occasion!
Ingredients:
  • 250g plain flour
  • 200g caster sugar
  • 40.00 ml poppy seeds
  • 40.00 ml finely grated lemon rind
  • 250ml milk
  • 80ml vegetable oil
  • Icing sugar to dust
Instructions:
  • Preheat the oven to 180°C and line a 12-cup muffin pan with paper cases.
  • In a large bowl, combine sifted flour with sugar, poppy seeds, and rind, mixing thoroughly.
  • Combine milk, oil, and egg in a small jug. Pour into flour mixture and mix gently until just combined.
  • Evenly distribute the mixture into paper cases and bake for around 12 minutes until a skewer inserted in the center comes out clean. Allow to cool on a wire rack and lightly dust with icing sugar.
