"Whip up quick lemon desserts by layering rice pudding and curd in zesty lemon halves."
Ingredients:
  • 1 lemon, halved lengthways
  • Bought vanilla rice pudding
  • 2 tsp bought lemon curd
  • 10.00 gm caster sugar
Instructions:
  • Carefully remove the flesh from the lemon halves using a small paring knife. Fill each lemon shell halfway with store-bought vanilla rice pudding.
  • Spread 1 tsp of store-bought lemon curd on each half, then add more rice pudding on top and smooth it out. Sprinkle generously with caster sugar. Use a cook’s blowtorch to caramelize the sugar (or broil in the oven with foil covering the lemon skin). Let it cool for 5 minutes before serving.
