Delicious lemon poppy seed muffins drizzled with a zesty lemon sugar glaze.
Ingredients:
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder (make sure your baking powder is no older than 6 months)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons poppy seeds
  • 10 tablespoons unsalted butter (1 1/4 stick), softened
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 cup plain yogurt
  • 1 tablespoon lemon zest
  • Glaze
  • 2 tablespoons fresh lemon juice
  • 1 cup confectioner's sugar (powdered sugar)
Instructions:
  • Position oven rack in the middle-lower part of the oven and preheat at 375°F.
  • Combine flour, baking powder, baking soda, poppy seeds, and salt in a bowl. Set aside.
  • Prepare the batter: In a large mixing bowl, whisk together butter and sugar until fluffy (approximately 2 minutes with an electric mixer). Add eggs one at a time, mixing until combined after each addition. Fold in the lemon zest. Gradually add the flour mixture and yogurt alternately: Incorporate one third of the dry ingredients, followed by one third of the yogurt. Repeat with another third of the dry ingredients and another third of the yogurt. Finish by adding the rest of the dry ingredients and yogurt, being careful not to overmix.
  • Prepare the muffin pan: Grease each cup of a 12-muffin pan with a light coating of olive oil or melted butter using a pastry brush. Divide the batter evenly among the cups.
  • Bake at 375°F for 25-30 minutes until muffins are golden brown and the center is cooked through. Let cool in the pan on a wire rack for 5 minutes, then remove muffins.
  • Prepare lemon glaze by whisking powdered sugar and lemon juice in a bowl. Adjust consistency with more lemon juice if needed. Brush warm muffins with the glaze using a pastry brush for a delectable finish. Add extra glaze as desired. Enjoy the muffins fresh and warm for the best flavor.
