Delicious lemon poppy seed muffins with a tangy glaze.
Ingredients:
  • 0.66666668653488 cup white sugar
  • 0.5 cup vegetable oil
  • 2 eggs
  • 2 lemons, zested
  • 1.3333333730698 cups all-purpose flour
  • 2 tablespoons poppy seeds
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup buttermilk
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 0.66666668653488 cup confectioners' sugar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prep 10 muffin cups with a light greasing or by using paper muffin liners.
  • Using an electric mixer, blend sugar and oil until creamy. Mix in eggs and lemon zest until the mixture is smooth and well combined.
  • Combine flour, poppy seeds, baking powder, and salt in a bowl. Gradually mix into the sugar mixture with buttermilk and 2 tablespoons lemon juice until a smooth batter forms. Stir in vanilla extract, then pour into prepared muffin tins.
  • Bake until golden and tops spring back when lightly pressed, about 25 to 35 minutes in preheated oven. Allow to cool in pans briefly before transferring to a wire rack to cool completely.
  • Mix confectioners' sugar and 2 tablespoons of lemon juice in a bowl; drizzle onto cooled muffins.
