Refreshing lemon poppy seed bread offers a delightful twist on classic zucchini treats.
Ingredients:
  • 3 eggs
  • 2 cups shredded zucchini
  • 1.6666667461395 cups white sugar
  • 0.75 cup vegetable oil
  • 2 teaspoons lemon extract
  • 2 teaspoons poppy seeds
  • 1 teaspoon baking soda
  • 3 cups all-purpose flour
  • 1.5 teaspoons baking powder

  • 1 teaspoon salt
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and generously grease and flour two 9x5-inch loaf pans.
  • In a large bowl, whisk eggs until smooth. Mix in zucchini, sugar, oil, lemon extract, and poppy seeds until well combined. Fold in flour, baking powder, cinnamon, and salt until fully incorporated. Transfer batter into the greased pans.
  • Bake until a toothpick inserted in the center comes out clean, approximately 1 hour in the preheated oven.
