Tangy lemon pork cutlets, a quick and delicious 6-ingredient dish!
Ingredients:
  • 300.00 gm medium-grain brown rice
  • 2 tsp finely grated lemon rind
  • 18.20 gm olive oil
  • 4 (200g each) pork cutlets
  • 62.50 ml pepitas (pumpkin seeds)
  • 2 green onions, thinly sliced
  • 270g jar chargrilled capsicum, drained, sliced
  • 21.00 gm lemon juice
Instructions:
  • Boil rice in a saucepan following package instructions until tender. Drain and transfer to a large bowl.
  • In a large ceramic dish, mix together lemon rind and olive oil. Add the pork and coat it well. Preheat a chargrill pan over medium heat and grill the pork for 5 minutes on each side until fully cooked.
  • Combine pepitas, onion, capsicum, and lemon juice with the rice, stirring well. Season with salt and pepper, and serve the pork with the flavorful rice mixture.
