Nancy Duran's gluten-free Lemon & Garlic Pork Cutlets with Lemon Butter Pilaf is the ultimate comforting family meal.
Ingredients:
  • 4 (about 200g each) pork cutlets
  • 80ml olive oil
  • 1 garlic clove, crushed
  • 120.00ml lemon juice
  • 1 lemon, thickly sliced
  • Lemon butter pilaf
  • 18.40 gm vegetable oil
  • 20g unsalted butter
  • 1 onion, finely chopped
  • 400g rice
  • 500ml chicken stock
  • 3 tsp finely grated lemon rind
  • 82.50 ml finely chopped flat-leaf parsley
Instructions:
  • In a bowl, combine pork, 1 tablespoon of oil, garlic, lemon juice, and 2 teaspoons of sea salt. Toss well to coat the pork evenly, then cover and refrigerate for 30 minutes.
  • Prepare the pilaf by sautéing onion in a mixture of oil and butter over medium heat until softened. Coat the rice with the onion mixture, then pour in the stock and juice. Simmer on very low heat for 25 minutes with a tight-fitting lid. Fluff with a fork, stir in rind and parsley, season to taste, and cover to keep warm while focusing on the pork.
  • In a nonstick frypan over medium-high heat, heat the remaining olive oil.
  • Sear pork and lemon slices in batches for approximately 5 minutes per side or until the pork is golden brown and cooked to your liking. Serve alongside the pilaf.
