Spicy lemon garlic pork with Mediterranean salad for a fast weeknight dinner.
Ingredients:
  • 42.00 gm lemon juice
  • 2 garlic cloves, crushed
  • 1 tsp cracked black pepper
  • 5.00 gm ground paprika
  • 1/4 tsp cayenne pepper
  • 18.20 gm olive oil
  • 4 Pork Forequarter Cutlets
  • 300g Australian Mediterranean Style Salad
  • 60ml dressing
  • 125.00 ml flat-leaf parsley, chopped
  • 50g fetta, crumbled
Instructions:
  • In a medium bowl, mix together lemon juice, garlic, pepper, paprika, cayenne pepper, and oil. Season the mixture, then add the pork and coat it evenly.
  • Preheat a large frying pan over medium-high heat. Sear pork for 3 minutes on each side until golden brown and fully cooked. Remove from pan and let it rest on a plate, covered, for 5 minutes before serving.
  • Toss salad mix with dressing in a large bowl. Serve pork and salad garnished with parsley and feta cheese.
