Lemon salmon with minted crushed peas (low-fat)

Savor this delectable salmon dish paired perfectly with minty peas.
Ingredients:
  • 12 slices of lemon
  • 4 x 120g skinless salmon fillets
  • 36.40 gm olive oil
  • 3 spring onions, sliced
  • 450g frozen peas, thawed
  • 250ml vegetable stock
  • 5.00 gm caster sugar
  • 62.50 ml roughly chopped mint leaves
  • 82.50 ml grated parmesan
Instructions:
  • In a saucepan, heat oil over medium-low heat, sauté spring onions for 1 minute. Increase heat to medium-high, add peas, stock, sugar, and mint. Cook for 5 minutes. Reserve 1/3 cup (80ml) of the liquid before draining. Return reserved liquid to the pea mixture. Roughly mash or pulse in a processor. Stir in cheese, cover, and set aside.
  • Arrange lemon slices over the fillets. Heat oil in a large non-stick frypan over high heat. Place fillets, lemon-side down, and cook for 3 minutes until lemon caramelises. Flip over and cook for another 2-3 minutes. Serve over peas.
