Baked lemon salmon with fruity salsa, served over rice.
Ingredients:
  • 1 pound salmon steaks
  • 1 lemon, juiced
  • 1 tablespoon chopped fresh rosemary
  • 1 lemon, sliced
  • 0.33333334326744 cup water
  • 0.25 cup diced fresh pineapple
  • 0.25 cup minced onion
  • 2 fresh jalapeno peppers, diced
  • 1 tomato, diced
  • 0.5 cup pineapple juice
  • 0.25 cup diced red bell pepper
  • 0.25 cup diced yellow bell pepper
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) for the perfect baking temperature.
  • Place the salmon steaks in a shallow baking dish, generously drizzle with tangy lemon juice, then sprinkle with aromatic rosemary, salt, and pepper. Garnish with lemon slices and carefully pour water into the dish.
  • Bake in a preheated oven for 30 to 40 minutes, or until easily flaked with a fork.
  • Combine pineapple, onion, garlic, jalapeno, tomato, pineapple juice, red bell pepper, and yellow bell pepper in a bowl. Chill while baking the fish. Serve fish topped with salsa.
