Hot smoked salmon with an amazing chilli salsa

Impress your friends with homemade smoked salmon!
Ingredients:
  • 1 sprig of fresh rosemary
  • a few sprigs of fresh sage
  • 2 x 200 g wild or organic salmon fillets from sustainable sources, ask your fishmonger, skin on
  • olive oil
  • 1 lime halved
  • a few whole coriander leaves
  • 1-2 fresh red chillies deseeded and finely chopped
  • 2-3 medium-sized ripe tomatoes deseeded and diced
  • ½ cucumber peeled and finely diced
  • 1 lime juice of
  • 2 spring onions trimmed and finely sliced
  • 1 small handful coriander leaves picked and chopped
  • 1 ripe avocado stoned, peeled and chopped
  • extra virgin olive oil
Instructions:
  • Prepare your smoker by placing wood shavings and herbs in a biscuit tin. Insert a wire rack halfway down the tin or make one from chicken wire. Poke the lid a few times with a screwdriver. Season salmon with salt, olive oil, and grill skin-side down in the tin over medium heat for 8-10 minutes until it smokes. Mix salsa ingredients to taste. Let the salmon rest for 3 minutes off the heat. Plate the salmon, top with salsa, coriander, and olive oil. Serve with lime and extra salsa. Enjoy with new potatoes and a green salad.
