Elevate your new year with nutritious hot-smoked salmon and flavorful brown rice salad.
Ingredients:
  • 100g brown rice
  • 1 bunch asparagus, woody ends trimmed, cut into 5cm lengths
  • 200g snow peas, thinly sliced lengthways
  • 2 spring onions, thinly sliced diagonally
  • 185g pkt Brand Hot Smoked Salmon, coarsely flaked
  • 3 tsp salt-reduced tamari
  • 10.60 gm lemon juice
  • 2.50 gm mirin seasoning
  • 2.50 gm caster sugar
  • 1/2 tsp sesame oil
  • 1/2 sheet nori, finely shredded
  • 1.50 gm sesame seeds, toasted
Instructions:
  • Prepare the rice according to package instructions and allow it to cool completely.
  • Blanch the asparagus and snow peas in boiling water for 2 minutes until vibrant green and crisp-tender. Shock in cold water, then drain thoroughly.
  • Mix the rice, asparagus, snow peas, spring onion, and salmon in a bowl. Split the mixture between 2 airtight containers. In a small bottle, mix tamari, lemon juice, mirin, sugar, and oil, then shake well. Drizzle the dressing over the salad right before serving. Top with nori and sesame seeds before serving.
