Lemon bites: A fluffy cake-like treat with a burst of citrus flavor.
Ingredients:
  • 625.00 ml plain flour
  • 285.95 gm caster sugar
  • 6.00 gm baking powder
  • 125g butter, melted, cooled
  • 117.50 gm sour cream
  • 2 eggs, lightly beaten
  • 3 tsp finely grated lemon rind
  • 86.63 gm lemon juice
  • Lemon zest, to serve
  • 375.00 gm pure icing sugar, sifted
  • 77.55 gm sour cream
Instructions:
  • Preheat the oven to 160C/140C fan-forced and line 4 large baking trays with baking paper.
  • In a bowl, mix flour, sugar, and baking powder. Create a well and add melted butter, sour cream, egg, lemon rind, and juice. Stir well until the mixture resembles a thick cake batter. Spoon level tablespoons of the batter onto prepared trays, leaving 6cm between each. Bake one tray at a time for 12 minutes or until lightly firm to the touch. Allow to rest for 5 minutes before moving to a wire rack to cool completely.
  • Prepare Sour Cream Icing: Combine icing sugar, sour cream, and lemon juice, whisking until smooth and thick. Quickly spread the icing over biscuits, then sprinkle with lemon zest. Allow to set for 1 hour before serving.
