Lemon-Apricot Chicken (Cooking for 2)

Upgrade your crispy baked chicken with zesty lemon and apricot sauce using Bisquick Heart Smart®!
Ingredients:
  • 2 tablespoons fat-free egg product or 1 egg white
  • 1 tablespoon water
  • 1/2 cup Bisquick Heart Smart® mix
  • 1 1/2 teaspoons grated lemon peel
  • 1/8 teaspoon garlic powder
  • 3 small chicken breasts (1/2 lb)
  • Cooking spray
  • Lemon slices, if desired
  • 1/3 cup apricot preserves
  • 1 tablespoon lemon juice
  • 1/4 teaspoon soy sauce
  • 1/8 teaspoon ground ginger
Instructions:
  • Preheat oven to 425°F and coat a 13x9-inch pan with cooking spray. Gently mix egg product and water in a shallow dish. In a separate dish, combine Bisquick® mix, lemon peel, and garlic powder. Flatten chicken breasts to 1/2-inch thickness using plastic wrap or waxed paper.
  • Coat chicken in flavorful egg mixture, then generously cover with Bisquick mixture. Arrange in pan and lightly spray with cooking spray.
  • Bake the chicken uncovered for 20 minutes, then turn and bake for an additional 10 minutes, or until the chicken is fully cooked through.
  • Combine all Lemon-Apricot Sauce ingredients in a small microwavable bowl. Microwave on High for 1 minute, then stir. Slice the chicken into 1/2-inch pieces and pour the sauce over it. Finish by garnishing with lemon slices.
