Elevate your chicken dinner with a zesty citrus kick, ready in under an hour.
Ingredients:
  • 1 egg
  • 2 tablespoons water
  • 1 cup Original Bisquick™ mix
  • 1 tablespoon grated lemon peel
  • 1/4 teaspoon garlic powder
  • 4 boneless skinless chicken breasts
  • 3 tablespoons butter or margarine, melted
  • 2/3 cup apricot preserves
  • 2 tablespoons lemon juice
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon soy sauce
Instructions:
  • Preheat oven to 425°F. Grease a 15x10-inch baking pan with cooking spray. Gently beat the egg and water. Combine baking mix, lemon peel, and garlic powder in a bowl.
  • First, immerse the chicken in the egg mixture, followed by coating it with the baking mix blend. Then, transfer the chicken to the pan and generously drizzle it with the melted butter.
  • Bake the chicken uncovered for 20 minutes, then turn it and bake for an additional 10 minutes until the juices run clear. Warm the remaining ingredients in a saucepan over low heat, stirring occasionally. Drizzle the sauce over the chicken before serving.
