Protein-packed lemon-blueberry muffins with pea protein powder and vanilla Greek yogurt for a nutritious twist.
Ingredients:
  • 1.3333333730698 cups nonfat vanilla Greek yogurt
  • 3 tablespoons unsalted butter, softened
  • 1 large egg
  • 1 large egg white
  • 1 medium lemon, zested and juiced
  • 0.75 cup whole wheat flour
  • 0.75 cup pea protein powder
  • 0.25 cup white sugar
  • 2 teaspoons baking soda
  • 0.25 teaspoon salt
  • 6 tablespoons unsweetened vanilla-flavored almond milk
  • 1 cup fresh blueberries
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and prepare a 12-cup muffin tin by greasing it or lining it with paper liners.
  • Combine yogurt, butter, egg, egg white, fresh lemon zest, and lemon juice in a medium bowl until well mixed.
  • In a large bowl, combine flour, protein powder, sugar, baking soda, and salt. Add wet ingredients and mix until combined - the batter will be thick. Gradually stir in almond milk until smooth, then gently fold in fresh blueberries. Fill muffin tin with batter evenly.
  • Bake in the oven until tops are golden brown and a toothpick inserted in the middle comes out clean, about 25-30 minutes.
