Lemon-coconut cookies: crispy outside, chewy inside, with a hint of lemon like a snickerdoodle.
Ingredients:
  • 1 cup butter, softened
  • 1.5 cups sugar
  • 2 eggs
  • 1 tablespoon lemon juice
  • 2.5 cups flour
  • 0.75 cup dried unsweetened coconut
  • 1.5 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 0.5 teaspoon lemon zest
  • 0.25 teaspoon salt
Instructions:
  • Preheat oven to 400°F (200°C).
  • In a bowl, cream together butter and sugar until smooth using an electric mixer. Add eggs one at a time, beating well after each addition. Stir in lemon juice. In a separate bowl, combine flour, coconut, cream of tartar, baking soda, lemon zest, and salt. Gradually add the dry ingredients to the butter mixture, mixing on low speed for about 2 minutes until fully combined.
  • Spoon small mounds of dough onto 2 cookie sheets without greasing them.
  • Bake in the oven until edges turn golden brown, for about 7 to 10 minutes. Repeat with the rest of the batter.
