Ginger-spiced scones filled with tangy lemon curd, a delightful and comforting treat straight from the oven!
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1/4 cup sugar
  • 3 teaspoons baking powder
  • 1/3 cup firm butter or margarine
  • 2/3 cup buttermilk
  • 1 tablespoon grated gingerroot
  • 1/2 cup lemon curd
  • Coarse or granulated sugar, if desired
Instructions:
  • Preheat oven to 400°F and gently grease a cookie sheet.
  • In a large bowl, combine flour, 1/4 cup sugar, and baking powder. Using a pastry blender or 2 knives, cut in the butter until the mixture resembles fine crumbs. Stir in buttermilk and gingerroot until the dough comes together and forms a ball.
  • Divide the dough in half and place one half on a cookie sheet, patting or rolling it into a 7-inch circle. Spread the lemon curd over the dough, leaving 1/2 inch from the edge. Shape the remaining dough into a 7-inch circle and carefully place it over the lemon curd. Pinch the edges gently to seal. Sprinkle with sugar and make 8 cuts on the surface of the dough to form wedges, cutting 1/4 inch deep (avoiding cutting into the lemon curd).
  • Bake for 18 to 20 minutes until golden brown. Let cool for 5 minutes on the cookie sheet before transferring to a serving platter. Cut into wedges and serve warm.
