"Whip up zesty Bisquick® citrus waffles with blueberry-maple syrup in just 30 minutes for a delightful breakfast treat!"
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 1 to 2 tablespoons poppy seed
  • 1 tablespoon grated lemon peel
  • 1 1/4 cups cold club soda
  • 1 egg
  • 1/4 cup butter, melted
  • 1/2 cup real maple or maple-flavored syrup
  • 1 bag (12 oz) frozen blueberries, thawed
  • 1 teaspoon grated lemon peel
  • 2 teaspoons lemon juice
  • Crème fraîche, if desired
Instructions:
  • Combine Bisquick mix, poppy seed, and 1 tablespoon of lemon peel in a medium bowl. In a separate small bowl, whisk together club soda, egg, and butter. Gently fold the club soda mixture into the Bisquick mixture until just combined (do not overmix - it's okay if it's lumpy). Allow the batter to rest for 3 minutes before proceeding.
  • Preheat Belgian waffle maker and lightly brush with vegetable oil. Pour 3/4 to 1 cup of batter onto the center of the hot waffle maker for each waffle. Close the lid and bake for about 5 minutes, or until waffles are golden brown and steaming stops.
  • Combine the syrup, blueberries, 1 teaspoon of lemon peel, and lemon juice in a medium bowl. Serve the waffles with the blueberry-maple syrup and crème fraîche.
