Ingredients:
  • 2 large oranges, peeled
  • 2 x 400g cans lentils, drained, rinsed
  • 120g baby rocket
  • 100g low-fat feta, crumbled
  • 450g can baby beetroot, drained, quartered
  • 20.00 ml red wine vinegar
Instructions:
  • Prepare oranges by segmenting them directly over a bowl, making sure to squeeze the juice from the membranes into the same bowl. Set aside the juice. Mix lentils, orange segments, rocket, and feta in a large bowl before transferring the mixture to a plate.
  • Place the beetroot on top of the lentil mixture. Combine vinegar and the orange juice in a jug, then season with salt and pepper. Drizzle the mixture over the salad and serve.
