Lentil pilaf with char-grilled chicken

Savor the flavorful lentil pilaf paired with juicy char-grilled chicken.
Ingredients:
  • 36.40 gm olive oil
  • 1 brown onion, halved, thinly sliced
  • 1 tsp ground coriander
  • 200.00 gm basmati rice, drained
  • 510.00 gm chicken stock
  • 400g can lentils, drained, rinsed
  • 82.50 ml slivered almonds, toasted (see Notes)
  • 62.50 ml mint leaves
  • 4 small chicken breasts, trimmed
  • 3 garlic cloves, crushed
  • 1 tsp chilli powder
  • Zest and juice of 1 lemon
  • Baba ganoush, to serve
Instructions:
  • In a medium saucepan, heat half of the oil over high heat. Sauté the onion until golden and tender, about 6-8 minutes. Stir in the coriander and cook for 1 minute more.
  • Combine the rice and stock in the pot, bring to a boil, then simmer on low heat with the lid on for 10 minutes. Remove from heat and let it sit for 5 minutes before gently mixing in the lentils, almonds, and mint.
  • Preheat a char-grill to medium heat. Toss chicken in a bowl with the remaining oil, garlic, chili, and lemon zest.
  • Char-grill chicken for 5-6 minutes on each side until fully cooked. Serve alongside lentil pilaf, drizzle with fresh lemon juice, and finish with a side of flavorful baba ganoush.
