Satisfying flourless brownies made with lentils and protein powder for a guilt-free treat that rivals the classic.
Ingredients:
  • cooking spray
  • 1 (15 ounce) can green lentils, drained and rinsed
  • 3 tablespoons water, or as needed
  • 3 eggs
  • 7 tablespoons white sugar, or more to taste
  • 3 tablespoons margarine (such as Smart Balance®)
  • 6 tablespoons cocoa powder
  • 5 scoops vanilla protein powder
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously coat an 8-inch baking pan with cooking spray all around.
  • Blend lentils and water until smooth.
  • In a large bowl, combine the lentil paste with eggs, sugar, margarine, and vanilla extract. Fold in cocoa powder and protein powder until the batter is thick and fully mixed. Pour the batter into the prepared pan.
  • Bake until a toothpick inserted in the center comes out clean, about 25-30 minutes in the preheated oven.
