Lentil stew

Cozy up with a delicious, vegetarian lentil stew for a comforting cold night dinner.
Ingredients:
  • 36.40 gm olive oil
  • 1 celery stick, finely chopped
  • 3 garlic cloves, thinly sliced
  • 20.00 ml finely chopped fresh oregano leaves, plus extra to serve
  • 375.00 ml French style green lentils, rinsed, drained
  • 1L vegetable liquid stock
  • 400g can cherry tomatoes
  • Roti bread, to serve
  • Yoghurt, to serve
Instructions:
  • In a large saucepan over medium heat, sauté onion, celery, garlic, and oregano in oil for 10 minutes until softened. Add lentils, pour in Massel Liquid Stock Vegetable Style, and bring to a boil. Lower heat and simmer covered for 45 minutes. Add tomatoes, continue to simmer covered for another 15 minutes. Season to taste.
  • Garnish with additional oregano and serve with roti bread and yogurt on the side.
