Hearty lentil stew with fresh tomatoes and chicken sausage, perfect for chilly evenings.
Ingredients:
  • 3 cups water
  • 1.5 cups dry brown lentils, rinsed and drained
  • 1 tablespoon olive oil
  • 0.5 large yellow onion, diced
  • 6 cloves garlic, minced
  • 1.75 cups low-sodium chicken broth, divided
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon red pepper flakes
  • 3 medium plum tomatoes, diced
  • 5 links pre-cooked chicken sausage, cut into 1-inch cubes
Instructions:
  • In a medium pot, bring water to a boil. Add lentils and simmer covered until soft, 25 to 30 minutes.
  • Blend the lentils into a velvety paste using a food processor or blender.
  • In a large pot, heat olive oil over medium-high heat. Add onion and garlic, cook and stir for 1 to 2 minutes. Pour in 1/4 cup chicken broth and cook until onion begins to soften, about 1 to 2 minutes more.
  • Stir turmeric, cumin, chili powder, and red pepper flakes into the broth until it turns a vibrant orange hue. Add tomatoes and an additional 1/2 cup of broth. Cover and simmer for 3 to 4 minutes.
  • Pour in the rest of the broth. Slowly blend in the lentil puree until thick and creamy. Mix in the chicken sausage. Cover, simmer on low for 15-20 minutes, stirring occasionally. Let cool for 2 minutes before serving warm.
