Quick sausage, lentil and tomato stew

Enjoy gourmet meals on a budget with simple ingredients and a touch of creativity.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 red onion, halved, thinly sliced
  • 1 red capsicum, finely chopped
  • 500g cevapici beef sausages, cut into 1cm pieces (see notes)
  • 2 x 400g cans brown lentils, drained, rinsed
  • 500.00 ml slow-roasted tomatoes, roughly chopped (see notes)
  • 382.50 gm chicken style liquid stock
  • 40.00 ml fresh parsley leaves, chopped, plus extra leaves to serve
  • 40.00 ml fresh coriander leaves, chopped, plus extra leaves to serve
  • Parmesan, grated, to serve
  • Sour cream, to serve
Instructions:
  • In a large deep frying pan over medium-high heat, heat oil until shimmering. Add onion and capsicum and sauté for 5 minutes until onion is softened. Then, add sausages and cook for 8 minutes, breaking them up with a wooden spoon until browned.
  • Combine lentils, tomato, and stock in a pot. Stir well and bring to a boil. Reduce heat to low and simmer for 8 to 10 minutes until the mixture thickens. Season with salt and pepper, then stir in parsley and coriander.
  • Garnish generously with Parmesan, parsley, and coriander. Accompany with a dollop of sour cream.
