Create a delicious Italian lentil and sausage dish using simple pantry items and fresh ingredients.
Ingredients:
  • Olive oil spray
  • 1 brown onion, finely chopped
  • 1 carrot, peeled, finely chopped
  • 2 celery sticks, trimmed, finely chopped
  • 44.40 gm no-added-salt tomato paste
  • 2 x 400g cans lentils, rinsed, drained
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 375g pkt lean Italian-style sausages
  • 100g baby spinach leaves
  • 20.00 ml balsamic vinegar
  • Chopped fresh continental parsley, to serve
Instructions:
  • 1. Preheat a non-stick frying pan over medium heat and spray with oil. Cook onion, carrot, and celery, stirring occasionally, until soft, for about 6-7 minutes. 2. Stir in garlic and cook for 1 minute until aromatic. Add tomato paste and cook for another 1-2 minutes until heated through. 3. Mix in lentils and tomato, bring to a boil, then reduce heat to low.
  • Heat a large non-stick frying pan over medium-high heat and spray with oil. Cook sausages, turning occasionally, until golden brown, about 6-7 minutes.
  • Combine the sausages with the lentil mixture and simmer until the sausages are fully cooked, about 6-7 minutes. Mix in the spinach and vinegar, then cook until the spinach wilts, stirring occasionally for 1-2 minutes. Finish by topping with parsley.
