Whip up this quick and easy salad in no time for a delicious meal!
Ingredients:
  • 75.08 gm extra virgin olive oil
  • 500g packet thick pork, apple and cider sausages
  • 2 zucchini, quartered lengthways, cut into 2cm pieces
  • 250g cherry truss tomatoes, cut into small bunches
  • 2 bunches asparagus, trimmed
  • 400g can brown lentils, drained, rinsed
  • 80g baby spinach
  • 3 green onions, thinly sliced diagonally
  • 125.00 ml fresh basil leaves
Instructions:
  • In a large frying pan over medium-high heat, heat 1 tablespoon of oil until shimmering. Sear sausages for 8 minutes, turning occasionally, until golden and cooked. Set aside on a plate and cover to retain warmth. In the same pan, sauté zucchini for 2 minutes until just tender. Transfer to a spacious bowl.
  • Place the tomatoes in the pan and cook until they blister and begin to soften, about 5 minutes. Then transfer them to a plate.
  • Cook the asparagus in boiling water for 2 minutes until vibrant green and tender. Drain and then refresh in cold water. Drain again.
  • Cut sausages on a diagonal. Combine sausages, lentils, spinach, and two-thirds of the onion with zucchini. Season with salt and pepper, then gently mix together.
  • Combine the vinegar and the rest of the oil in a bowl. Season with salt and pepper. Spread the sausage mixture on a large serving platter. Layer with asparagus, tomatoes, basil, and the remaining onion. Drizzle the dressing over the top. Serve.
