Flavorful Italian sausages steal the show in this delicious family dinner.
Ingredients:
  • 1 red onion, cut into wedges
  • 1 small eggplant, coarsely chopped
  • 1 large zucchini, coarsely chopped
  • 1 red capsicum, coarsely chopped
  • 1 yellow capsicum, coarsely chopped
  • 200g Perino grape tomatoes
  • 2 garlic cloves, thinly sliced
  • 400g can diced tomatoes
  • 125ml red wine
  • 500g Traditional Recipe Italian Sausages
  • 125.00 ml small basil leaves
Instructions:
  • Preheat the oven to 230°C. In a large roasting pan, combine onion, eggplant, zucchini, capsicum, grape tomatoes, and garlic. Drizzle with oil and toss to coat. Bake for 5 minutes until just tender, turning occasionally. Add diced tomato and wine, then bake for 15 minutes until sauce thickens and vegetables are tender.
  • Preheat the grill or chargrill to medium-high heat. Cook the sausages, turning occasionally, for 8 minutes or until they are golden brown and fully cooked.
  • Take each sausage and slice it in half diagonally. Arrange them over the ratatouille. Bake for 2 minutes or until warm. Garnish with fresh basil leaves before serving.
