Create a flavorful dish by combining rigatoni with pork sausages and sweet grape tomatoes.
Ingredients:
  • 350g rigatoni or penne pasta
  • 4 Classic Pork Sausages, casings removed, coarsely chopped
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 125ml white wine
  • 2 x 200g punnets Perino grape tomatoes, halved
  • 22.20 gm tomato paste
  • 125.00 ml finely shredded basil
  • Finely grated parmesan, to serve
  • Rocket leaves, to serve
Instructions:
  • Prepare the pasta according to the package instructions until it is cooked al dente. Then, drain thoroughly.
  • Heat a large frying pan over medium-high heat. Cook sausages, breaking up large lumps with a wooden spoon, until browned, about 5 minutes. Transfer to a bowl.
  • Pour the oil into the pan. Sauté the onion for 5 mins until soft. Add the garlic and cook for 1 min until fragrant. Pour in the wine and let it simmer until reduced by half. Stir in the tomato and tomato paste and cook for 2 mins until the tomato starts to break down. Remove from heat and mix in the sausage meat. Season with salt and pepper.
  • Drizzle the flavorful tomato sauce on top of the pasta and mix in the fresh basil. Portion into individual bowls, sprinkle with grated parmesan, and accompany with peppery rocket leaves. Enjoy!
