Italian-inspired pork sausage-stuffed zucchini boats filled with two cheeses and tomato. Easy and flavorful!
Ingredients:
  • 3 large zucchini
  • 1 (14 ounce) can petite diced tomatoes
  • 1 small white onion, minced
  • 1 small green bell pepper, minced
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 1 pound bulk pork sausage
  • 2 pinches Italian seasoning
  • 1 (10 ounce) can tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese
  • 1 pinch minced fresh Italian parsley
Instructions:
  • Carefully remove seeds from zucchinis, keeping shells intact. Combine zucchini innards with diced tomatoes, white onion, and green pepper in a bowl.
  • In a skillet over medium heat, melt butter until sizzling. Cook garlic until fragrant, around 30 seconds. Add zucchini pulp and cook until nearly tender, about 5 minutes. Mix in sausage, Italian seasoning, salt, and pepper.
  • Simmer the mixture for 5 minutes, then stir in the tomato sauce and continue simmering for another 5 minutes. Reduce heat to low.
  • Begin by preheating the oven to 350 degrees F (175 degrees C, then bring a pot of water to a boil on the stove.
  • Boil zucchini halves for 3 minutes, then remove.
  • Arrange zucchini halves in a baking dish, stuff them with sausage mix, and sprinkle with mozzarella and Parmesan cheeses. Cover with foil.
  • After baking in the preheated oven for 20 minutes, uncover and cook until tender for an additional 30 minutes.
  • Sprinkle with vibrant fresh parsley and savor every bite!
