Savory stuffed zucchini with pork sausage, garlic, and Parmesan.
Ingredients:
  • 3 medium zucchini
  • 1 pound pork sausage
  • 1 cup dry bread crumbs
  • 0.5 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 (32 ounce) jar spaghetti sauce
  • 0.5 cup shredded mozzarella cheese
Instructions:
  • Assemble all ingredients and heat the oven to 350°F (175°C).
  • Prepare the zucchini by removing stems and slicing lengthwise. Scoop out the seeds and transfer them to a large bowl. Combine the seeds with sausage, bread crumbs, Parmesan cheese, and garlic, and mix well.
  • Fill the squash with flavorful sausage mix, place it in a 9x13-inch baking dish, generously smother with spaghetti sauce, and cover with aluminum foil for baking.
  • Bake in the preheated oven for 45 minutes until the sausage is browned and cooked through. Remove foil, sprinkle with mozzarella cheese, and continue baking for another 15 minutes until the cheese is melted.
