Stuffed Zucchini Casserole

Zucchini boats stuffed with flavorful beef and sausage mixture, topped with tomatoes and tomato soup, baked to perfection in under an hour.
Ingredients:
  • 4 medium zucchini
  • 1 pound ground beef
  • 1 pound Italian sausage
  • 0.5 cup dried bread crumbs
  • 1 egg, beaten
  • 1 (28 ounce) can crushed tomatoes
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 cup water
Instructions:
  • Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and generously grease a 13x9 inch baking dish.
  • Halve the zucchini lengthwise and remove the seeds using a spoon. Set aside about 3/4 of the seeds for later. In a medium bowl, combine ground beef, sausage, chopped onion, bread crumbs, egg, and the reserved zucchini seeds. Fill each zucchini half with the meat mixture, mounding it on top. Arrange the filled zucchini halves in a baking dish.
  • Combine crushed tomatoes, tomato soup, and water in a bowl. Pour the tomato mixture generously over the stuffed zucchini. Bake for around 45 minutes in the preheated oven. Consider using foil or a baking sheet underneath to catch any potential splatters.
