Stuffed Zucchini Shells

Mouthwatering vegetarian zucchini boats filled with savory garlic, mushrooms, onions, and creamy feta cheese.
Ingredients:
  • 2 zucchinis
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 4 ounces fresh mushrooms, sliced
  • 2 cloves garlic, minced
  • salt and ground black pepper to taste
  • 0.25 cup crumbled feta cheese
  • 0.25 cup grated Parmesan cheese, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Prepare the zucchini by trimming the ends and halving them lengthwise. Scoop out the flesh and dice it, then place the zucchini shells in a baking dish.
  • In a 10-inch skillet, warm olive oil over medium heat. Sauté onion, mushrooms, and garlic in the fragrant oil until the onion is tender, about 5 to 7 minutes. Season with salt and pepper to taste.
  • Mix the diced zucchini into the onion mixture and sauté until heated through for about 5 minutes. Fill the zucchini shells in the baking dish with the mixture, then sprinkle each with 1 tablespoon of feta cheese and 1 tablespoon of Parmesan cheese on top.
  • Cook the zucchini shells in the preheated oven until they are soft, for 30 to 40 minutes.
