Zucchini boats filled with cheesy bread crumb stuffing, perfect as a flavorful side or satisfying main dish.
Ingredients:
  • 1.5 pounds zucchini, halved
  • 1.5 cups dry bread crumbs
  • 2 ounces shredded Cheddar cheese
  • 0.25 cup minced onion
  • 2 tablespoons chopped fresh parsley
  • 1.25 teaspoons salt
  • 0.25 cup grated Parmesan cheese, divided
  • 2 eggs, beaten
  • 2 tablespoons butter, diced
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Boil a pot of salted water. Cook zucchini until tender, around 15 minutes. Drain and hollow out zucchini to create a 'boat'.
  • Mix together zucchini flesh, bread crumbs, Cheddar cheese, onion, parsley, salt, most of the Parmesan cheese, and egg in a medium bowl. Fill the zucchini boats with the mixture, then top with butter and sprinkle with the remaining Parmesan cheese.
  • Place in a hot oven and bake for 30 minutes.
