Gourmet sausage on a baguette with caramelized onions and homemade tomato sauce - a delicious twist on a classic!
Ingredients:
  • 36.40 gm olive oil
  • 2 brown onions, thinly sliced
  • 4 thick sausages
  • 2 x 35cm-long baguettes
  • Rocket leaves, to serve
  • 425g can chopped tomatoes
  • 32.00 gm brown sugar
  • 24.40 gm Worcestershire sauce
  • 2.60 gm Tabasco sauce, optional
Instructions:
  • Create a flavorful tomato sauce by combining tomatoes, sugar, Worcestershire sauce, Tabasco sauce, salt, and pepper in a saucepan. Bring to a boil over medium heat, then simmer partially covered on medium-low heat for 10-15 minutes until the sauce thickens. Allow the sauce to cool before using.
  • Heat 1 tablespoon of oil in a non-stick frying pan over medium heat. Cook onions until tender and golden, about 5 to 7 minutes. Transfer to a plate. In the same pan, cook sausages in remaining oil for 8 minutes or until cooked through, turning occasionally.
  • Cut the baguettes in half crossways, then split each piece through the center without cutting all the way through. Fill each baguette with a sausage, onions, and tomato sauce. Enjoy with a side of rocket leaves.
