Elevate footy-game fare into a beloved family favorite with a few simple tweaks.
Ingredients:
  • 20g butter
  • 1 brown onion, thickly sliced
  • 1 medium fennel, trimmed, thinly sliced
  • 500g pork sausage mince
  • 1 tsp ground fennel
  • 1/2 tsp caraway seeds
  • 2 sheets (25cm) ready-rolled puff pastry
  • Fennel or caraway seeds, to sprinkle
  • Chips, to serve
  • Salad, to serve
  • Tomato sauce, to serve
Instructions:
  • In a large frying pan over medium-low heat, melt the butter until it begins to foam. Add the onion and fennel, stirring occasionally, and cook for 10 minutes until they are very soft and slightly caramelized. Remove from heat and let it cool.
  • Preheat the oven to 220°C. Combine onion mixture, sausage mince, breadcrumbs, ground fennel, and caraway seeds in a large bowl. Mix thoroughly using your hands until fully incorporated, then season with salt and pepper.
  • Prepare a baking tray with parchment paper. Divide the sausage mixture into 4 equal portions. Shape one portion into a 25cm-long log with wet hands and place it along the edge of a pastry sheet. Roll the pastry to encase the filling. Score the pastry with a small, sharp knife, cut the log in half, and place on the lined tray. Repeat with the rest of the sausage mixture and pastry. Lightly brush the rolls with egg and sprinkle with fennel or caraway seeds.
  • Bake in a hot oven for 20-25 minutes until fully cooked and pastry is golden and puffed. Enjoy with chips, salad, and tomato sauce, if preferred.
