Combine the comforting flavors of Parmigiana and sausage rolls for a delicious twist on a classic dish.
Ingredients:
  • 500g pork mince
  • 500g pork sausages, casings removed
  • 300g leg ham, finely chopped
  • 1 small brown onion, coarsely grated
  • 1-2 garlic cloves, crushed
  • 420g jar Napoletana pasta sauce
  • 75g (1 ½ cups) panko bread crumbs
  • 5.00 gm Tuscan seasoning
  • 62.50 ml fresh continental parsley leaves, finely chopped
  • 2 eggs
  • 6 sheets frozen puff pastry, just thawed
  • 250g pkt pre-grated 3 cheese blend
  • 40g (½ cup) finely grated parmesan cheese
Instructions:
  • Preheat your oven to 220C (200C fan forced) and prepare 2 baking trays by lining them with baking paper.
  • In a large bowl, mix together the mince, sausage, ham, onion, garlic, 125ml (½ cup) of pasta sauce, breadcrumbs, seasoning, parsley, and 1 egg. Form 24 portions of the mixture. In a separate small bowl, whisk the remaining egg with salt until lightly combined.
  • Cut each pastry sheet in half horizontally. Spread a portion of the mince mixture along one side of each pastry half and shape it into a log. Sprinkle a generous pinch of the 3 cheese blend over the mince. Brush the opposite side of the pastry with egg wash and tightly roll up each pastry half into a log, keeping the seam side down.
  • Continue the process with the remaining pastry, mince, and cheese. Cut each into 3 pieces, then place them on the prepared trays. Brush with egg, sprinkle over Parmesan, and bake for 25-30 minutes until golden brown and fully cooked.
  • Warm up the rest of the pasta sauce in a small saucepan over medium heat, then pour it into a serving bowl. Enjoy with sausage rolls.
