Chorizo and mint sausage rolls

Spice up Aussie sausage rolls with chorizo for a flavorful twist.
Ingredients:
  • 450g packet smoky chorizo sausages
  • 1/2 red capsicum, finely chopped
  • 2 green onions, finely chopped
  • 2 tsp finely grated lemon rind
  • 40.00 ml chopped fresh mint leaves
  • 40.00 ml chopped fresh coriander leaves
  • 82.50 ml panko breadcrumbs
  • 2 sheets frozen puff pastry, partially thawed
  • 1 egg, lightly beaten
  • Spicy tomato relish, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and prepare a large baking tray by lining it with baking paper.
  • Remove sausage casings and press out the mince. Mix the mince with capsicum, onion, lemon rind, mint, coriander, and breadcrumbs. Season with salt and pepper.
  • Take each piece of pastry and slice it in half lengthwise. Spread 1/4 of the mince mixture evenly along one side of each piece of pastry. Brush a bit of egg along the opposite edge of the pastry, then roll it up to encase the filling. Trim the ends and cut the pastry into 6 pieces. Arrange them on the baking tray you've prepared. Repeat the same process with the rest of the pastry and mince mixture, and finally, brush the tops of the pastry with egg.
  • Bake until the pastry is golden and puffed, typically 20 to 25 minutes. Serve with tomato relish.
