Spiced chickpea and chorizo pitas with avocado, mint, and lemon - a light and flavorful meal.
Ingredients:
  • 4 small pieces wholemeal pita bread or flatbread
  • 2 chorizo sausages, thinly sliced
  • 400g can chickpeas, rinsed, drained
  • 2.50 gm smoked paprika
  • 1.25 gm ground cumin
  • 1/2 tsp ground coriander
  • 1 large ripe avocado, stoned, peeled, coarsely chopped
  • 10.60 gm lemon juice
  • 140g yoghurt
  • 1/2 large ripe avocado, extra, stoned, peeled, thinly sliced
  • 65g pesto
Instructions:
  • Preheat a chargrill on high. Brush the bread with half of the oil and grill in batches for 1-2 minutes on each side until lightly charred. Serve on individual plates.
  • Grill the chorizo until charred on both sides for about 1 minute each. Then, transfer it to a large heatproof bowl. In a separate bowl, mix chickpeas, paprika, cumin, coriander, and the remaining oil. Grill the mixture, stirring occasionally, until heated through. Finally, combine the grilled mixture with the chorizo in the bowl.
  • Combine the chopped avocado, lemon juice, and half of the yogurt in a food processor. Season with your favorite seasonings. Blend until smooth.
  • Spread the avocado mixture smoothly over the bread, then layer with sliced avocado. Add the chorizo mixture, dollop with remaining yoghurt, and drizzle with pesto before serving right away.
