Hearty lentil and chicken soup: a warming cool weather favorite!
Ingredients:
  • 36.40 gm olive oil
  • 1 onion, finely diced
  • 2 garlic cloves, finely chopped
  • 1 large red chilli, seeded and finely chopped
  • 2 chicken breast fillets (185g each), cut into 1cm cubes
  • 1 tsp ground turmeric
  • 5.00 gm ground cumin
  • 1 vine-ripened tomato, diced
  • 125.00 ml brown lentils
  • 35.20 gm pearl barley
  • 1275.00 gm (1.25 litres) chicken style liquid stock
  • Salt & freshly ground black pepper
  • Juice of 1 lime
  • 60.00 ml thick plain yoghurt
  • 125.00 ml fresh coriander leaves
Instructions:
  • In a large saucepan over medium heat, warm the olive oil. Sauté the onion, garlic, and chili for 4-5 minutes until softened. Mix in the chicken and sear. Sprinkle in the turmeric and cumin, cooking for an additional minute.
  • Combine tomato, lentils, pearl barley, and stock in a saucepan. Bring to a boil, then lower the heat and simmer for 30 minutes until lentils are cooked. Season with salt and pepper, stir in lime juice, and serve with a dollop of yogurt and fresh coriander.
