Tender chicken and hearty lentils cooked with tomatoes, onions, and warming spices for an easy and satisfying winter stew.
Ingredients:
  • 1 pound green lentils, sorted and rinsed
  • 1 (15 ounce) can petite diced tomatoes
  • 1 large onion, diced
  • 1 tablespoon jarred minced garlic
  • 2.5 teaspoons ground cumin
  • 1.5 teaspoons dried oregano
  • 1.5 teaspoons chili powder
  • 1.5 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt, or more to taste
  • 7 cups chicken broth
  • 1.5 pounds bone-in, skin-on chicken thighs, or more to taste
Instructions:
  • In a slow cooker, mix green lentils, tomatoes, onion, minced garlic, cumin, oregano, chili powder, paprika, garlic powder, onion powder, salt, and chicken broth. Gently stir to blend seasonings. Nestle chicken thighs in the mixture, ensuring they are covered with liquid.
  • Cook on High for 4 hours until the chicken is tender and falls off the bone, and the lentils are soft. If needed, cook a bit longer until desired tenderness is reached.
  • Carefully lift the chicken out of the soup using tongs and transfer it to a cutting board. Use the tongs to pull the meat off the bones, then either roughly chop or break it into bite-sized pieces, discarding the bones. Stir the meat back into the soup and season to taste.
