Budget-friendly lentil and brown rice meal for a satisfying experience.
Ingredients:
  • 1.5 cups brown rice
  • 3 cups water
  • 3 tablespoons sesame oil
  • 1 teaspoon curry powder
  • 1 teaspoon red pepper flakes, or to taste
  • 1 cube vegetable bouillon
  • 1.5 cups red lentils
Instructions:
  • In a saucepan over high heat, bring 3 cups of water and brown rice to a boil. Lower the heat to medium-low, cover, and simmer until the rice is tender, about 45 to 50 minutes.
  • Heat sesame oil in a pan over medium heat, add curry powder and red pepper flakes, cook briefly until fragrant. Add remaining water, bouillon cube, and lentils. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until lentils are nearly tender. Make indentations in lentils, crack an egg into each, cover, and cook for 5 minutes for medium-well eggs. Serve over brown rice.
