Lettuce and orange salad

Vibrant spring salad pairs perfectly with grilled pork or barbecue. Ready in just 15 minutes, it's fresh and effortless.
Ingredients:
  • 5 oranges
  • 1 iceberg lettuce, cored, washed, dried, leaves roughly torn
  • 1 avocado, diced
  • 125.00 ml kalamata olives
  • 200g feta, crumbled
  • 113.75 gm olive oil
  • 82.50 ml white wine vinegar
  • 20.00 gm caster sugar
  • 1 red onion, finely diced
Instructions:
  • Peel 2 oranges, removing pith, then thinly slice into rounds. Juice remaining oranges. Arrange lettuce, orange slices, avocado, olives, and feta on a large serving platter.
  • Combine 2/3 cup orange juice, oil, vinegar, and sugar in a screw-top jar. Shake vigorously until well mixed. Add onion, salt, and freshly ground black pepper, then shake again to blend. Drizzle the dressing over the salad and enjoy.
