Lettuce wedges with spiced mayonnaise

Ingredients:
  • 1 iceberg lettuce, cored, washed, dried
  • 247.50 gm whole-egg mayonnaise
  • 2 large lemons, juiced
  • 11.00 gm sweet chilli sauce
  • 1/2 green capsicum, finely diced
  • 62.50 ml green olives, chopped
  • 4 gherkins, finely diced
  • 40.00 ml finely chopped chives
  • 1 hard-boiled egg, grated
Instructions:
  • Prepare the lettuce by slicing it in half crossways and cutting each half into 8 wedges. Arrange the wedges on a platter, cover, and chill in the refrigerator until ready to serve.
  • In a bowl, combine mayonnaise, 1/2 cup lemon juice, sweet chilli sauce, capsicum, olives, gherkins, and chives. Season with salt and pepper, then stir until well mixed.
  • Drizzle spiced mayonnaise over crisp lettuce wedges. Sprinkle with chopped boiled egg and enjoy.
