Prepare the shortcake a day in advance for easy on-the-go filling.
Ingredients:
  • 200g (1 1/3 cups) self-raising flour
  • 100g (1/2 cup) caster sugar
  • 75g butter, chilled
  • 60ml (1/4 cup) milk
  • 2 egg yolks
  • 1 egg, lightly whisked
  • 12.90 gm demerara sugar
  • 2 peaches, cut into wedges
  • 185ml (3/4 cup) thickened cream
  • 65g (1/4 cup) sour cream
  • 90g (1/4 cup) apricot jam
Instructions:
  • Preheat your oven to 180°C. Line a baking tray with parchment paper. Sift the flour into a large bowl, then stir in all the caster sugar except 1 tablespoon.
  • Grate the butter over the flour and use your fingertips to blend it in until the mixture looks like breadcrumbs. Create a well in the center. In a small jug, mix the milk, egg yolks, and half of the vanilla, then add them to the flour. Stir until just combined. Transfer the dough to a floured surface and knead lightly until smooth. Shape into a 15cm disc and place on a lined tray.
  • Coat with the egg wash and generously sprinkle with demerara sugar. Bake for 20-25 minutes until golden and firm. Allow to cool for 30 minutes before serving.
  • Combine ripe, juicy peaches with a portion of the sweet caster sugar in a bowl.
  • In a bowl, use an electric beater to whip the cream, reserved caster sugar, and remaining vanilla until firm peaks form. Gently mix in the sour cream.
  • Carefully slice the shortcake in half using a serrated knife. Spread the bottom half with delectable apricot jam. Layer on the luscious cream mixture, followed by the peach mixture. Finish by gently placing the remaining shortcake on top.
