Light and fluffy coconut macaroons with a hint of almond - perfect for parties.
Ingredients:
  • cooking spray
  • 2 large egg whites
  • 0.5 teaspoon almond extract
  • 1 (7 ounce) package shredded coconut
  • 0.33333334326744 cup white sugar
  • 3 tablespoons all-purpose flour
  • 0.125 teaspoon salt
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and generously coat a baking sheet with cooking spray.
  • Whisk egg whites until frothy, then gently stir in almond extract.
  • In a large bowl, mix coconut, sugar, flour, and salt. Gently fold in the egg whites until batter is combined.
  • Spoon batter onto the baking sheet, spacing each spoonful 2 inches apart.
  • Bake until edges are golden brown, about 20 minutes in the preheated oven.
  • Take the cookies out of the oven and place them on wire racks to cool.
