Indulge guilt-free with this lighter chocolate cake that's just as decadent.
Ingredients:
  • 75g unsalted butter, softened
  • 215.00 gm caster sugar
  • 225.00 gm self-raising flour
  • 42.90 gm Cocoa, sifted
  • 1.25 gm bicarbonate of soda
  • 257.50 gm reduced-fat milk
  • Cocoa powder, to serve
  • Mixed berries, to serve
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced) and generously grease a 22cm fluted ring pan.
  • In an electric mixer, combine butter, sugar, eggs, flour, cocoa, bicarbonate of soda, and milk on low speed until just mixed, about 1 minute. Then, switch to high speed and beat for an additional 2 minutes until the mixture is thick and creamy.
  • Transfer the mixture into the pan and level the top. Bake for 45 to 50 minutes until a skewer inserted in the middle comes out clean. Remove from the oven, let the cake sit in the pan for 5 minutes, then invert it onto a wire rack to cool.
  • Transfer the cake onto a serving plate. Sprinkle a dusting of cocoa powder on top. Finish by arranging the fresh berries over the cocoa. Serve and enjoy your creation.
