Deliciously light and fluffy chocolate cake.
Ingredients:
  • 200g dark chocolate, broken into pieces
  • 150g self-raising flour
  • 40g plain flour
  • 20.00 gm cocoa powder
  • 140g brown sugar
  • 160ml olive oil
  • 125ml milk
  • 130g yoghurt
  • Cocoa powder, to dust
Instructions:
  • Preheat your oven to 160°C and prepare a 20cm round cake pan by greasing it and lining the base with non-stick baking paper.
  • Microwave the chocolate in a heatproof bowl at 50% power, stirring every minute, for 2-3 minutes until melted. Allow it to cool slightly before using.
  • In a large bowl, sift the flours and cocoa. Stir in the sugar. In a separate bowl, whisk together the eggs, olive oil, milk, and yogurt. Add the cooled chocolate and egg mixture to the dry ingredients. Mix until well combined.
  • Transfer the mixture to the pan. Bake for 40-50 minutes until a skewer inserted comes out clean. Let it rest for 15 minutes before flipping onto a cake rack to cool. Dust with cocoa before serving.
