Impress foodie friends with dairy-free dark chocolate olive oil cake using high-quality chocolate.
Ingredients:
  • 3.5 ounces 70% dark chocolate, chopped
  • 0.5 cup white sugar
  • 6 tablespoons olive oil
  • 1 cup chopped almonds
  • 0.5 cup all-purpose flour
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350°F (175°C) while you prepare a 7-inch baking pan by greasing and lining it with parchment paper.
  • Melt chocolate in a double boiler over simmering water, stirring occasionally and scraping down the sides with a rubber spatula. This should take about 5 minutes. Remove from heat once melted.
  • In a large bowl, whisk together eggs and sugar until pale using an electric mixer. Fold in melted chocolate and olive oil until fully incorporated. In a separate bowl, mix together almonds, flour, and cinnamon, then add to the chocolate mixture. Stir until well combined. Transfer the batter into the prepared baking pan.
  • Bake in the preheated oven for 25 to 30 minutes until a toothpick inserted into the center comes out clean. Allow to cool completely before slicing and serving.
